Mango Sweet Rice

Evan and I absolutely love Thai food. It's one of our go-tos when we want to go out to eat but can't decide where to go. Thai food is something we both can always agree on. One thing I've noticed in my explorations of Thai cuisine is how complexity of the entrees contrast with the simplicity of the desserts. I mean, have you ever looked up how to make curry paste? Anyway, the other day we bought some sweet rice at our local Filipino market, and tonight we decide to attempt making a Thai dessert: mango sweet rice.

It was delicious! It was creamy, sweet, and not at all heavy. My only complaint is that we only used one mango. I would definitely use two next time. Here's the recipe!

Mango Sweet Rice

2 mangoes, diced
1 can light coconut milk
3 cups sweet rice
3.5 cups water
1/4 cup honey

1) Place rice in a colander and rinse it until the water runs clear (we forgot this step and it turned out fine, but I think it would have been better had we remembered).
2) Bring the water to a boil. Add the rice, reduce heat to medium and allow the rice to steam for 12-14 minutes, or until the water has been absorbed.
3) Add the coconut milk, honey and the mango. Stir and serve!
